  1. Cook quinoa according to package instructions and set aside.
  2. Season chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Heat 1 tbsp olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side, until cooked through. Let rest, then slice.
  4. In the same pan, add remaining olive oil. Sauté zucchini, bell pepper, and broccoli for 5-7 minutes until tender-crisp.
  5. Assemble bowls: layer quinoa, roasted veggies, and sliced chicken.
  6. Serve with your favorite dressing or enjoy as is!
