Ingredients
- 2 chicken breasts (about 150g each)
- 1 cup quinoa (cooked)
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tsp paprika
Instructions
- Cook quinoa according to package instructions and set aside.
- Season chicken breasts with garlic powder, paprika, salt, and pepper.
- Heat 1 tbsp olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side, until cooked through. Let rest, then slice.
- In the same pan, add remaining olive oil. Sauté zucchini, bell pepper, and broccoli for 5-7 minutes until tender-crisp.
- Assemble bowls: layer quinoa, roasted veggies, and sliced chicken.
- Serve with your favorite dressing or enjoy as is!
